Chicken Tortilla Soup
Ingredients
- 2 Chicken Breasts diced
- 1 Large Onion diced
- 2 tbsp. Butter
- 24 oz. Frozen Corn
- 28 oz. Petit Diced Tomatoes
- ½ cup Short Grain Rice
- ½ cup Tazah Tomato Paste
- 1 tbsp. Tazah Hot Pepper Paste
- 8 cups Chicken Broth
- Fresh Cilantro topping
- Fajita Seasoning to taste
- Taco Seasoning to taste
- Cumin to taste
Instructions
- Over medium heat, melt the butter and add the diced onion. Sauté until golden
- Meanwhile, dice your chicken breast and add 1 Tbsp. fajita seasoning and 1 tbsp. of taco seasoning
- After sautéing the onions add the diced chicken. Sauté until fully cooked
- Then add the frozen corn, the can of diced tomatoes, tomato paste and pepper paste
- Mix everything well together
- After it comes up to boil add 2 tbsp. of taco seasoning, 2 Tbsp. of fajita seasoning, rice and chicken broth
- Stir it all together, as soon as it comes to a boil close the lid leaving it slightly open on the side
- Let it simmer over medium-low heat for 30 minutes
- Add 2 tsp. of cumin powder and your soup is ready to serve!
