Okra Stew / Bamieh

In the Middle East, stew-making is a cherished tradition, and one dish I particularly enjoy is okra stew. If you've never tasted okra before, this recipe might pleasantly surprise you—it's delicious and not at all slimy! Here's how I make bamieh/بامية. Give it a try and see for yourself!

Ingredients

  • 1 pack Tazah Frozen Okra size zero
  • Vegetable Oil
  • 1 tsp Tazah Ghee
  • 2 tbsp. Tazah Extra Virgin Olive Oil
  • 1 medium Onion finely chopped
  • 12 oz. Beef or Lamb
  • 4 cups Water + 1 cup reserved
  • 2-3 tbsp. Tazah Tomato Paste
  • 1 Head of Garlic peeled & cloves sliced
  • 1 bunch Cilantro chopped

Spices

  • ½ tsp. Ground Cinnamon
  • ½ tsp. 7 Spice
  • ¼ tsp. Black Pepper
  • 2-3 Bay Leaves
  • ¼ tsp. Ground Coriander
  • Salt to taste

Instructions

  • Preheat oven to 375℉ conventional bake.
  • In a strainer rinse the okra in cold water and let drain.
  • Spread the okra on a non-stick baking sheet and drizzle with vegetable oil enough to coat. Bake in the oven until browned from all sides and rotate every few minutes during baking. If you don’t have a conventional oven, use the broiler. Just be sure to keep an eye on it to prevent burning. Once done, set aside.
  • In a pot over medium heat, sauté the onion in the olive oil with a sprinkle of salt until soft.
  • Add the meat and give it astir. Add all the spices and the bay leaves (don’t add salt yet. Save until the end). Keep stirring the meat until browned on all sides.
  • Add 4 cups of water to the pot and wait for it to boil. Cover and let simmer for 60 minutes or until the meat is tender. If you’re in a rush, you can use a pressure cooker to cook for 20minutes and it will be ready.
  • Once the meat is cooked, the broth will reduce. Add the reserved 1 cup of water and tomato paste. Taste and add salt if needed. Let cook uncovered for 5 minutes
  • Add the okra and cover the pot. Let cook for 5 minutes over medium heat.
  • Fry the garlic and ground coriander in the ghee until golden. Add to the pot of okra stew with the cilantro and let cook together for a couple of minutes.
  • Serve with vermicelli rice & enjoy!
